Greetings to all! As we settle into our apartment in Bangalore I decided to try Indian cooking for the first time. As much as I love India I have never attempted to play with the myriad flavors and spices of the cuisine. But it’s a lot easier to cook Indian food in India with the presence of so many fresh, local ingredients. For this round I made bindi masala, which is chopped okra, onions, tomatoes, and spices.
Now, I must point out that I did not get the order of the recipe exactly right. It turns out I should have put the cumin seeds in before the onions, but my Indians friends say not to worry! I didn’t worry too much because the dish turned out to be delicious.
